Christine Kole | Granola Bars | Delicious December

 

Ingredients:

  • 1 1/2 sticks butter
  • 1/2 cup sugar
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 6 cups rolled oats
  • 1 cup nuts
  • 1 cup dried fruit
  • 1 cup chocolate chips
  • Flaked sea salt

Instructions: Melt butter, sugar, and honey in a sauce pan. Bring to a boil then turn down the heat to medium/low and let simmer until it becomes a rich amber color then remove from heat. Stir in vanilla. In a separate big bowl mix together rolled oats, dried fruit, and nuts. Pour caramel mixture over oats and mix with spatula until well coated. Press granola into a parchment lined baking sheet. Pre cut bars with a butter knife into desired sized bars. Melt chocolate chips and drizzle over the top of bars. Sprinkle sea salt over melted chocolate and then stick in freezer until hardened. Once hardened remove from freezer and break apart bars to serve and enjoy! Store in fridge or freezer if not eating right away.
