    I think it’s so important to have treats, especially around the holidays! Cinnamon rolls are my favorite dessert, so I wanted to create a recipe that would fuel my performance and keep me feeling my best. It took some experimenting, but I finally created a recipe that tasted AMAZING too! I hope you enjoy them as much as I do.

    Melt butter, sugar, and honey in a sauce pan. Bring to a boil then turn down the heat to medium/low and let simmer until it becomes a rich amber color then remove from heat. Stir in vanilla. In a separate big bowl mix together rolled oats, dried fruit, and nuts. Pour caramel mixture over oats and mix with spatula until well coated. Press granola into a parchment lined baking sheet.     Cut spaghetti squash in half lengthwise. Place spaghetti squash cut side down on a baking sheet and bake for 20-25 minutes or until the skin of the squash gives when you press on it. Then reduce oven heat to 350 degrees.

    Once squash is done cooking, remove threads and place in an 8×8 greased baking dish.

I learned how to make my own, because let's face it, sometimes the hands of bananas I buy ripen at varying rates. So to avoid wasting over-ripened bananas, this recipe is a great way to still put them to use!
